Recipe: Caramel Walnut Biscotti

Sorry, no quilting things today. I'm still working on the raffle quilt, but I had no time yesterday and today. Yesterday we had a meeting of the parent's association because on Sept, 2nd will be a huge party to celebrate the 20th anniversary and we are in charge of coffee, cakes, food and beverages. Apart from this my husband is preparing for a decathlon at the weekend after the party, so I mown the lawn and take care of the weeds. Tomorrow morning my baby-daughter will get her first vaccination and because we don't know how she will cope with that we will stay at home tomorrow afternoon. I hope I will find some time to quilt then. In the town where the pediatrician works is a fabric wholesaler. Not for patchwork fabric but for clothing material. Maybe I will stop by and drop in ...
Between lunch and our afternoon appointment I baked some Caramel Walnut Biscotti. They taste delicious with a cup of steaming coffee.

3/4 Tasse Walnuts
1/2 Tasse Finely ground oatmeal
1/2 Tasse Butter
3/4 Tasse Dark brown sugar, packed
2 Eggs
2 Essl. Kahlua (mex. Kaffeelikör)or double-strength

1 Teel. Vanilla extract
1 3/4 Tassen Unbleached or all-purpose flour
1 1/2 Teel. Baking powder
1/4 Teel. Salt

Place nuts in a shallow pan and bake in a preheatet 350 degree oven
for 8 to 10 minutes, or until golden brown. Let cool. Place oat
flour in a baking pan and bake in a 350 degree oven for 8 to 10
minutes, or until golden brown. In a mixing bowl cream butter and
suger until light and fluffy. Beat in eggs, Kahlua or coffee, and
vanilla. In a bowl combine the flour, baking powder and salt. Add to
the creamed mixture, mixing just til blended. Mix in the oat flour.
Coarsly chop nuts and fold in. Divide dough in half. On a greased
and floured baking sheet pat out into two logs about 1/2 inch high,
1 1/2 inch wide and 14 inches long, spacing at least 2 inches apart.
Bake in the middle of a preheated 325 degree oven for 25 min or
until lightly browned. Transfer from baking sheet to a rack. Let
cool for 5 min. Place on a cutting board. With a serrated knife
slice diagonally on a 45 degree angle about 1/2 inch thick. Lay the
slices flat on the baking sheet and return to the oven for 10 min,
turning them over once, and dry slightly. Let cool on a rack. Store
in a tightly covered container.
